A few months ago, I received an email from Filippo Berio asking if I would be interested to join their Food Lovers Campaign. This pizza is adapted from the recipe used by the staff at Roberta’s restaurant in Brooklyn, who make their tomato sauce simply by whizzing together canned tomatoes, a drizzle of olive oil and a pinch of salt. This is a simple sponge cake recipe – you can serve it plain sandwiched with jam to make a Victoria sponge cake, or fill with buttercream for a birthday cake.
