Recipes for quiche don’t have to be daunting – just take the time to make homemade pastry for a crispy slice of nostalgia. I let my dough get to warm and stretchy (zoinks!), repaired the rips with the pinch method, & par baked it, and then had disaster when I tried to take it out of the oven and half the crust broke off! I was just talking with an older male co-worker who grew up in South Philly and he said that this was his favorite pie, but he didn’t have a recipe.
You can use fresh spinach (you’d probably need twice as much) but you’d need to squeeze it dry just like the frozen. The recipe below is lightly adapted from Gural’s; some proportions changed ever so slightly in the transition from metric to conventional American measurements, and I used a standard round pie plate instead of Arcade Bakery’s rectangular mold.
Would love to have baking time and temperature for mini crust less quiches in ramekins. Bake crusts for 10-15 minutes, until crust just starts to brown and crisp around the edges. It looks amazing and I can’t wait to try it, but I’m afraid I would have to make 4 of the original recipe to feed everyone!
My new go-to recipe for any quiche (easy to substitute the spinach out for other things but keep the shallots, cheese, and egg/cream mixture). Sometimes, my son prefers just the most basic of quiches while my husband always steers more toward a quiche filled to the brim with veggies and meats, like this bacon and mushroom quiche I’ve shared before.
Roll out the pie crust and press it into a large fluted deep tart pan (or a deep dish pie pan). Your’s has way way too much spinach and too much cheese – its nothing more than spinach and cheese pie. A very full-flavoured quiche recipe, made with spicy chorizo, roasted red pepper and cheese.
