You can make your own by taking 1 cup milk and adding 1 tablespoon lemon juice or white vinegar. FYI- I had a bit of extra batter (I had doubled the recipe for the airplane shaped cake pan) and they made quite delicious cupcakes! As both ube and sweet potato are root crops, I suppose the texture of the cake will not be affected.

This also goes wonderfully as a chocolate whisky cake, with a dash of whisky in the ganache, a dram in the mix and tangelo or mandarin or orange segments on top of the ganache. Not just a gimmick, the courgette adds great moisture and texture to this scrumptious cake.
